RotaTherm
The Natec Network RotaTherm is a unique single stage continuous cooker, continuous steam cooker system. It provides significant flexibility, automation and control across a diverse range of products and processing conditions, delivering considerable benefits.
When it comes to processed cheese production, the agitation creates the characteristic smooth and uniform cheese texture. The RotaTherm offers the best control over the firmness and overall texture of the end product and also enables UHT processing, which extends the shelf life requiring less stringent refrigeration.
When industrially producing pasta filata cheese shredded cagliata curd blocks are usually heated and kneaded by a wet cooker, which - batch by batch - heats the curd in hot water or brine to soften it. Using the RotaTherm is an innovative continuous method, which does not require neither hot water nor brine.
In contrast to batch and retort cooking commonly used in pet food production, the RotaTherm represents an alternative continuous cooking solution that enables the shortest possible processing times and offers enormous space and energy savings.
The RotaTherm also enables optimized processing of numerous other product types, viscosities and compositions such as meat, sauces, purees, baby food and more.
